Originally carved into the volcanic cliffs of Oia in the 17th century as wine caves ("canaves"), this property was transformed into a luxury hotel in 1985 by the Chaidemenos family. It was one of the first establishments to introduce high-end tourism to the then-quiet village of Oia. The architecture is a pure expression of Cycladic heritage: stark white walls, curved ceilings, and minimalist stone floors that allow the deep blue of the Caldera to take center stage. Over the decades, it has evolved into an icon of Santorini, preserving the traditional "hypostyle" (underground) architecture while defining the modern aesthetic of the Greek islands.
